São Tomé · Amelonado — 100% pure MOOJO ceremonial cacao, RAW: unroasted.
The west coast of São Tomé, 100–700 m, on the former roças. Deep volcanic soils (andosols, nitisols) formed on basaltic rock; humid equatorial climate. Pure Amelonado, unhybridized, grown by Satocao.
Fermented for 5–7 days in boxes, then sun-dried on traditional covered decks. Fruity profile, with a fine and subtle texture.
RAW — the cacao is not roasted. No sugar, no additives.
