The Isminio Gonzalès family farm in Pajarillo (San Martín), in the Peruvian Upper Amazon. Low rainfall concentrates the sugars and requires a long fermentation period—up to two weeks—followed by solar drying on raised beds. Orange trees, butterflies, and birds share the grove.
Criollo & Fino de Aroma. Main harvest from April to August; smaller harvest from November to January.
RAW — the cacao is not roasted. No sugar, no additives.
