The high Piura Valley, 200–900 m, on the edge of the Sechura Desert. A desert microclimate, well-drained mineral soils, and wide day-night temperature swings that concentrate sugars and acidity. White beans of the Nacional group, Norandino Cooperative.

Fermentation for 3–5 days in boxes, followed by 5–8 days of sun-drying. Fruity and floral flavor profile.
