The family-owned Isminio Gonzalès farm in Pajarillo (San Martín), in the Peruvian Upper Amazon region. Low rainfall concentrates the sugars and requires a long fermentation period—up to two weeks—followed by sun-drying on raised beds. Orange trees, butterflies, and birds share the plot.
Criollo & Fino de Aroma. Main harvest from April through August; small harvest from November through January.
RAW — the cacao is not roasted. No sugar, no additives.
