Belize's Maya Mountain is distinguished by a social model based on ethical, fair-trade cocoa, produced by 420 indigenous families, mainly Q'qechi' and Maya Motan.
This pure origin is our first grand cru to be shipped by sailboat, reducing our carbon footprint as much as possible for eco-responsible sourcing.
The all-Belizean team has mastered every stage, from organic cultivation to sun-drying. This process, carried out in three unique stages, creates a symphony of flavors with distinct notes of honey, pineapple, raisin, tobacco and fudge.
The beans of this cru, marked by a label guaranteeing the exceptional heritage of the dominant Amazonian Amelonado and Forastero hybrid cocoa trees, preserve their original quality and exceptional aromatic profile.
🔸 Lightly roasted at low temperatures (103°C, less than an hour), it reveals a powerfully fragrant flavor profile.
FROM THE BEAN TO THE SENSORY EXPERIENCE
Once roasted, the beans are ground on a stone millstone, releasing all their aromatic intensity. They are then shaped into 60 g bars and 240 g ritual molds, perfect for tasting and ceremonies.
For a freer experience, they are also transformed into 100% cocoa nibs, available in bulk, ready to be savoured in all their splendour.
