QUESTIONS ABOUT OUR PREMIUM cacao
Add your quantity of cacao (10 to 40gr) in 200 ml of hot water or milk (vegetable)
Be sure to heat your cacao at a temperature of 65°C maximum to keep all the nutrients present.
Add spices (chili, salt, cardamom, cinnamon, turmeric, ginger, ...)
Add sugar if necessary.
Whip by hand or with a blender, a frothy layer makes the preparation more delicious.
Sip and enjoy your cacao!
We propose a declination in three degrees of intensity, the most important in this exploration is to listen to yourself:
Daily dose
10 - 20g: improves mood and concentration, energizing effect (sensitive drinkers, pregnant women and children)
Creative dose
20 - 30g: Perfect for self-reflection, concentration, creativity, personal practice and bodywork.
Ceremonial Dose
30 - 50g: Feel deeper sensations, accompany inner exploration/group,
more energy during exercise, awareness and concentration.
These dosages are given as a guide.
cacao can have different effects depending on the body structure and sensitivity of each person.
There is no such thing as completely raw cacao, and there is a lot of misinterpretation since raw cacao powder has become a trend in the health food world.
During fermentation, the cacao beans are subjected to temperatures slightly above 50°C for several hours, which is essential for optimal fermentation. We do not add any external ferments that would reduce the temperature to meet a certain idea of the raw.
During the natural drying in the sun, the beans are also subjected to temperatures that can exceed 50°C, this method has always been used and is the one we recommend in our approach.
Our range offers 2 approaches:
Non-roasted or Low temperature. The low-temperature roasting allows a soft roasting from 100°C to 110°C in the heart of the beans for less than an hour.
Our cacao paste is never heated above 50°C in our workshops.
No nutrients are lost during the light roasting process, so you can turn the cacao into a warm cup of drinking chocolate without damaging any of the nutrients that make cacao the superfood that it is.
Our cacao is GMO free and is grown without chemical fertilizers or pesticides. We have chosen not to adhere to the EU-BIO label at this time, working with small isolated family farms around the world, certification is currently prohibitively expensive and excludes many small farmers from the game.
All of our beans are tested, cadmium and pesticide levels are below the legal level required for organic certification (0.02 instead of 0.10mg/kg). If you are a scientist or simply interested in discovering the complexity of the analyses we perform,

Several of our origins have chosen Fair-Trade but all have chosen agro-forestry, a clear visibility of the farm-gate (price that producers receive per ton, often 4x or 6x higher than Commodity cacao - traded on the stock markets), respect for labor laws, social protection or projects that are part of the deployment of community structures dynamic and humanly rich in meaning.
Our Direct Trading approach is based on dialogue and trust. Through regular exchanges with producers and our sources, we guarantee cacao with high added value for farmers and consumers. This goes far beyond a price of 200€/Ton for a certification, we are talking about long term projects with communities, know-how transmission programs, accompaniment of producers in their process by sharing knowledge and resources. Weaving links with those who make possible the presence of these cacaos in our hands and yours is the approach that MOOJO values in its daily work.
All of our cacao is of high quality and fine flavor. The cacao you prefer (both in terms of taste and effect) is certainly your personal preference.
The discovery pack makes it easy for you to try and compare your favorite cacao. On the product pages you will find more detailed information about the cacao. We like them all and intuitively choose which cacao to use when.
- It contains the highest level of antioxidants of any food source.
Antioxidants help eliminate free radicals in the body, which reduces stress levels.
- It is packed with minerals such as calcium, magnesium, zinc, iron, beta-carotene, omega 6 and amino acids.
- cacao contains an ingredient called theobromine, a bitter, slightly energizing alkaloid used medicinally as a heart stimulant and diuretic. This makes it a natural antidepressant and its magnesium content makes it a very good anti-stress and anti-fatigue.
- It allows the dilation of vessels and increases the flow of blood and oxygen to the brain, which induces the release of endorphins and dopamine, the hormones of well-being.
- It increases your energy level, without tiring you, and stimulates your digestion.
Ceremonial cacao is different from the chocolate we usually consume, it is free of any additives and its taste is intense.
As the beans are minimally processed, they contain an impressive amount of virtues for our physical, mental and emotional health. Ceremonial grade cacao respects the wisdom of the custodians of this plant and is expressed through:
- Sustainability: the land and the natural habitat where the plant is grown are treated with love and respect.
We speak here of agro-forestry techniques, see agro-ecology and permaculture for some growers.
- Organic: no pesticides, herbicides or other chemicals are used on the plant.
- Fair trade: the farmers who cultivate and harvest the plants are paid fairly according to their real needs,
while generating a margin allowing them to invest in the necessary equipment to lighten and facilitate their work as well as to invest in virtuous projects
- Minimal treatment: The fermentation is perfectly carried out, no ferment is added during the process, the drying in the sun is the only privileged method. The roasting is done at low temperature or is not roasted so that the beans keep their purity and natural properties. We also offer hand-roasted and traditionally wood-roasted products such as Tuq'Tuquilal from Guatemala.
cacao powder is obtained by separating cacao butter under high hydraulic pressure. cacao butter is a valuable product, often used for skin care and chocolate. The leftovers are pulverized into cacao powder.
That is why we use 100% minimally processed cacao paste, which contains all natural ingredients, without any additions or extractions.
The natural combination of cacao (including cacao butter!) has a high nutritional value and allows your body to better assimilate the active components. That's why we leave the cacao intact as a complete food source so that you can enjoy all its benefits in its pure state.
cacao contains very low doses of caffeine. You may not be able to tolerate caffeine because of an over-stimulated nervous system, but you will have no problem drinking 1 to 2 cups of cacao per day. We advise you to start with doses of 10gr for 200ml and go up crescendo in the doses if it suits you.
Cacao is an excellent alternative to coffee and we receive positive feedback from people who have replaced their coffee with cacao. The theobromine in cacao is a milder stimulant that lasts longer than caffeine.
It gives a smoother and longer lasting concentration and energy. Caffeine is an alkaloid that acts on the nervous system, which can result in more nervous and shaky energy. Theobromine has an effect on the cardiovascular system and increases blood flow in the body and brain.
The European regulation is very strict on the authorized levels of heavy metals and cadmium.
All our origins meet the strictest specifications and we do not have any beans with a rate higher than these values.
While we know of many moms who drank cacao safely throughout their pregnancy, as well as while breastfeeding, we as a company cannot make recommendations on what is safe for you and your baby during these times.
Of course, we always encourage people to consult their intuition and guidance system, as well as a trusted licensed holistic physician.
