Family property of Isminio Gonzalès and located in the province of Pajarillo provinceThis plantation is home to a wide variety of cocoa trees in a highly biodiverse environment.

Orange tree fields, traditionally cultivated in the region, attract butterflies, bees and birds in abundance. This natural richness gives the cocoa beans a rare aromatic complexity, marked by subtle notes of mirabelle plum, dried fruit and raisin.

With low rainfall in the San Martinregion, cocoa achieves exceptional sugar contentThis requires prolonged fermentation lasting up to two weeks. This long fermentation develops a naturally sweet bean, giving rise to a smooth, refined cocoa. Tree-To-Cup cocoa.

New: Raw chocolate - intense, natural taste

this cocoa is now also available in raw - unroasted unroasted cocoa beansprocessed at low temperatures to preserve their nutrients and offer a different taste experience from classic chocolate.

An unroasted cocoa that reveals fruity fruity, floral and honeyed flavorswhile preserving the integrity of cocoa's nutritional benefits.

HIBRIDOS FINO DE AROMA

Racine Carré is a crazy project for which Matéo, Jimmy and Gino
have given themselves a mission:

to offer a healthy, traceable, responsible chocolate, without intermediaries, made with good cacao. From the cacao root to the chocolate square.

To master the steps from A to Z, you have to start at the root of the cacao, from the plantation.

It is in Peru, in their Alto Miro plantation, but also with three producers of the region, that Matéo, Jimmy and Gino cultivate the cacao trees, select and harvest the pods, then sort, ferment and dry the beans to obtain an exceptional raw material.

ALTO MIRO

With very low rainfall for the San Martin region, the cacao contains a record level of sugar that will require a fermentation that lasts up to two weeks.

This long fermentation allows us to obtain a naturally sweet cacao bean and thus offer a 100% cacao that remains particularly sweet.
