This Criollo Grano Blanco comes from the Tabasco region and its beans are characterized by a beautiful fruity acidity. Its aromatic profile containsnotes of yellow fruit and citrus and is distinguished by its refreshing accent.



Particular care is given to thefermentation and drying, carried out in the sun, in order to obtain a cacao that fully expresses its entire aromatic palette.

We take great care in selecting our beans, ensuring that they are Grand Cru and minimally processed.

Lightly roasted (low temperature, 110° in the heart of the bean for less than an hour) to bring out the powerfully fragrant flavor profile.

The beans are then ground and transformed into 100% cacao nibs.

Mix the cacao with 250 ml of hot liquid (water, infusion, milk,...)
Temperature of max. 65° in order to keep all the nutritive values.

To embellish your drink you can add spices: pepper, salt, cardamom, cinnamon, turmeric, ginger, ... or simply use one of our spice mixes.

cacao is bitter, you can sweeten it with milk (vegetable), coconut sugar, yacon or lucuma.

Other superfoods are great allies: maca, moringa, camu camu, reishi, shitake, chaga, vanilla...

We advise you to use a milk frother in order to mix your drink well and to obtain a smooth and silky texture.
Crushed, the cacao can be used to sprinkle your granolas, energy balls, yoghurts, ...

By letting your cacao cool, you will have an excellent base to make your smoothies & shakes.

It can also be added in your sweet preparations, pastries, coulis, cookies, homemade pralines, brownies, chocolate bars, ...

Of course you can also simply crunch it, the pleasure becomes in this sense infinite!

Light - 10 to 20g
Medium - 20 to 30g
Strong / Medicinal - Between 30 and 50g

This 100% cacao invites you to take full advantage of all its virtues & flavors.

It contains theobromine which has a stimulating effect.

For children and pregnant women, a light to medium dosage is recommended.

These dosages are indicative. The effects will be different
from one person to another (body, structures & sensitivities,
current activity, positioning of the stars...)

Its high magnesium content and the amines present in cacao make it an outstanding superfood.

It is one of the richest foods in magnesium, a mineral essential to the proper functioning of the body.

The alkaloids present, including theobromine, play the role of natural stimulant.

Raw cacao is a nutritional gold mine! It is rich in fiber, calcium, potassium, phosphorus, beta-carotene, omega 6, trace elements such as iron, copper,
selenium and zinc.

As for vitamins, cacao contains
vitamins A, B1, B9, C and E.

cacao naturally calms and soothes, it acts beneficially on the cardiovascular system by dilating the veins and increasing the blood flow but also the oxygen supplying the brain.

The molecules it contains promote the production of endorphins (the famous hormone of pleasure), which explains this feeling of well-being felt.

CRIOLLO GRANO BLANCO

The Criollo Grano Blanco (about 30% white beans), comes from the Tabasco region.

These beans are characterized by a beautiful fruity acidity. Finca El Rocio is located in the municipality of Teapa, in the state of Tabasco, Mexico. This farm began growing cacao in 2014 with the goal of 100% organic management of its 30 hectares.

Particular care is given to the fermentation and drying, carried out in the sun, in order to obtain a cacao that expresses the full range of its aroma.

TACOTALPA - TABASCO

Tacotalpa is a small town in the state of Tabasco.

This entity is known for its wetlands and thick jungle. You may have heard that Tabasco is an Eden... Well, it's true! Around this state you will find jungle areas, some elevations, lakes and beaches close to the Gulf of Mexico.

MAYAN HERITAGE

It is believed that in the 5th and 6th centuries, the Mayan Zoque Indians began to colonize the territory that today constitutes Tacotalpa.

Important archeological pieces dating from the 8th to 10th century A.D., discovered by the ethnologist and poet from Tabasco Carlos Pellicer Cámara in the caves of "Cuesta Chica", near the present village of Tapijulapa, suggest the use of these caves as ceremonial centers, since no buildings were found, only foundations of no importance.

According to local historian Ciro Coutiño López, this area was called Sierra de los Zoques when it was discovered by the Spaniards.
