San José de Sisa 72% dark chocolate, from Peru, has good acidity, with intense notes of passion fruit and Morello cherry. The sweetness of pear counterbalances this acidity to create a rounded, harmonious whole.

In San José de Sisa, we met Miguel, who has been growing cacao alongside his parents for over 15 years.

Now an expert in cacao, he grows ICS-95, a cacao variety renowned for its aromatic qualities, but which is very complicated to maintain.

Conscientious about being in harmony with nature, his farm uses agroforestry: an agricultural model where trees and shrubs are intentionally mixed, inspired by the way a forest works, where each species contributes something to another.
