This Criollo Grano Blanco comes from the Tabasco region and its beans are characterized by a beautiful fruity acidity. Its aromatic profile containsnotes of yellow fruit and citrus and is distinguished by its refreshing accent.



Particular care is given to thefermentation and drying, carried out in the sun, in order to obtain a cacao that fully expresses its entire aromatic palette.

We take great care in selecting our beans, ensuring that they are Grand Cru and minimally processed.

Lightly roasted (low temperature, 110° in the heart of the bean for less than an hour) to bring out the powerfully fragrant flavor profile.

The beans are then ground and transformed into 100% cacao nibs.

CRIOLLO GRANO BLANCO

The Criollo Grano Blanco (about 30% white beans), comes from the Tabasco region.

These beans are characterized by a beautiful fruity acidity. Finca El Rocio is located in the municipality of Teapa, in the state of Tabasco, Mexico. This farm began growing cacao in 2014 with the goal of 100% organic management of its 30 hectares.

Particular care is given to the fermentation and drying, carried out in the sun, in order to obtain a cacao that expresses the full range of its aroma.

TACOTALPA - TABASCO

Tacotalpa is a small town in the state of Tabasco.

This entity is known for its wetlands and thick jungle. You may have heard that Tabasco is an Eden... Well, it's true! Around this state you will find jungle areas, some elevations, lakes and beaches close to the Gulf of Mexico.

MAYAN HERITAGE

It is believed that in the 5th and 6th centuries, the Mayan Zoque Indians began to colonize the territory that today constitutes Tacotalpa.

Important archeological pieces dating from the 8th to 10th century A.D., discovered by the ethnologist and poet from Tabasco Carlos Pellicer Cámara in the caves of "Cuesta Chica", near the present village of Tapijulapa, suggest the use of these caves as ceremonial centers, since no buildings were found, only foundations of no importance.

According to local historian Ciro Coutiño López, this area was called Sierra de los Zoques when it was discovered by the Spaniards.
